Nothing else changed.[<\/span><span style=\"font-weight: 400;\">1]<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The food in question is something most people have been actively avoiding. And almost everyone has been preparing it wrong.<\/span><\/p>\n<h2><b>What changes in the fridge<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">When a starchy food cools, its starch molecules rearrange into a structure that the digestive system cannot break down.[<\/span><span style=\"font-weight: 400;\">5]<\/span><span style=\"font-weight: 400;\"> This is called retrograded resistant starch. (Not to be confused with retrograde Mercury, which explains nothing about your digestion but gets blamed for everything else.) It passes through the small intestine untouched and arrives intact in the colon \u2014 where specific bacteria treat it as food.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cooling creates roughly 40% more resistant starch than serving the same food hot.[<\/span><span style=\"font-weight: 400;\">6]<\/span><span style=\"font-weight: 400;\"> A clinical study found that chilled potatoes lowered blood sugar by 9% and insulin levels by 23% at 30 minutes compared to the same potatoes served hot.[<\/span><span style=\"font-weight: 400;\">4]<\/span><\/p>\n<p><b>How long to cool in the fridge?<\/b><span style=\"font-weight: 400;\"> Minimum 12 hours. Overnight is the practical answer.<\/span><\/p>\n<p><b>Can you reheat it?<\/b><span style=\"font-weight: 400;\"> Yes, partially. Reheating gently destroys only about a quarter of the resistant starch that formed overnight.[<\/span><span style=\"font-weight: 400;\">5]<\/span><span style=\"font-weight: 400;\"> Cold is best; gently reheated is second; freshly boiled and hot is last.<\/span><\/p>\n<h2><b>What your gut bacteria has to do with it<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">A clinical study in <\/span><i><span style=\"font-weight: 400;\">Nature Metabolism<\/span><\/i><span style=\"font-weight: 400;\"> (2024) found that 8 weeks of resistant starch produced an average weight loss of 2.8\u202fkg \u2014 without any other changes to diet or lifestyle.[<\/span><span style=\"font-weight: 400;\">1]<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The weight loss wasn\u2019t about eating less. Researchers traced it to a specific gut bacterium \u2014 <\/span><i><span style=\"font-weight: 400;\">Bifidobacterium adolescentis<\/span><\/i><span style=\"font-weight: 400;\"> \u2014 which multiplied rapidly in people eating resistant starch. This bacterium changes how fat is absorbed, repairs the gut lining, and reduces inflammation.[<\/span><span style=\"font-weight: 400;\">1]<\/span><span style=\"font-weight: 400;\"> When given directly to overweight mice, it protected them from gaining more weight.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">A 2026 study in <\/span><i><span style=\"font-weight: 400;\">Frontiers in Nutrition<\/span><\/i><span style=\"font-weight: 400;\"> analysed 586 stool samples from several independent studies and found something striking: resistant starch specifically eliminated a cluster of harmful bacteria \u2014 the kind linked to immune problems and chronic inflammation \u2014 without disturbing the beneficial ones.[<\/span><span style=\"font-weight: 400;\">7]<\/span><span style=\"font-weight: 400;\"> Targeted weeding, not scorched earth.<\/span><\/p>\n<h2><b>It doesn\u2019t stop at weight loss<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">The CAPP2 trial followed people with Lynch syndrome \u2014 a hereditary condition that dramatically raises cancer risk \u2014 for 20 years. Those taking 30\u202fg of resistant starch daily had 5 diagnoses of stomach and oesophageal cancers, versus 21 in the placebo group.<\/span><span style=\"font-weight: 400;\">8<\/span><span style=\"font-weight: 400;\"> This applies specifically to people with this genetic condition, not the general population, but 5 versus 21 is not a number you easily forget.<\/span><\/p>\n<h2><b>Where to find it (and how much)<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">All amounts are per 100\u202fg serving, cooked and cooled where applicable:<\/span><span style=\"font-weight: 400;\">2\u00b76<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Lentils, chickpeas, white beans<\/b><span style=\"font-weight: 400;\"> \u2014 4\u20136g. The richest whole-food source. Eat cold, straight from the fridge into a salad.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Potatoes<\/b><span style=\"font-weight: 400;\"> \u2014 2\u20135g after overnight chilling.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Cooked and cooled rice<\/b><span style=\"font-weight: 400;\"> \u2014 1\u20133g.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Raw (uncooked) oats<\/b><span style=\"font-weight: 400;\"> \u2014 3\u20134g. Soaked overnight oats retain far more than cooked porridge \u2014 cooking destroys most of it.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Green banana<\/b><span style=\"font-weight: 400;\"> \u2014 4\u20136g per medium banana. As it ripens and turns yellow, the resistant starch converts to sugar. A fully ripe banana has almost none left.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><b>Raw potato starch<\/b><span style=\"font-weight: 400;\"> (as a supplement) \u2014 roughly 8g per tablespoon. Stir into cold water or yoghurt. Do not heat it.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">Aim for 15\u201330g daily. A bowl of cold lentils and a chilled potato gets you there without supplements.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">One honest caveat: the <\/span><i><span style=\"font-weight: 400;\">Nature Metabolism<\/span><\/i><span style=\"font-weight: 400;\"> weight-loss trial had 37 participants.<\/span><span style=\"font-weight: 400;\">1<\/span><span style=\"font-weight: 400;\"> The mechanism is well supported and confirmed in animal studies \u2014 but a large-scale human verdict is still pending.<\/span><\/p>\n<h2><b>Cold potato salad \u2014 a recipe that earns its place<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">This isn\u2019t just a side dish. It\u2019s a deliberate delivery of resistant starch and everything that comes with it. It also happens to be good.<\/span><\/p>\n<p><b>Ingredients (serves 2)<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">500g waxy potatoes (waxy varieties hold their shape better after chilling than floury ones)<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 tbsp olive oil<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 tbsp apple cider vinegar<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 tsp Dijon mustard<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">1 small red onion, finely sliced<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">2 tbsp capers or cornichons<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Handful of flat-leaf parsley, roughly chopped<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Salt and black pepper<\/span><\/li>\n<\/ul>\n<p><b>Method<\/b><\/p>\n<ol>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Boil potatoes whole in salted water until just tender \u2014 about 20 minutes. Do not overcook.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Drain. Cool to room temperature, then refrigerate for <\/span><b>at least 12 hours<\/b><span style=\"font-weight: 400;\">. This step is non-negotiable.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">The next day: slice cold. Do not reheat.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Whisk oil, vinegar, and mustard into a dressing.
